Kenya doesn’t produce very much coffee, so the crop is normally sought after. They use a scale with 8 different size categories to sort their beans. Among these categories are E-elephant, PB-peaberry, AA-screen 17/18, and MH/ML. Grade E is the biggest size, peaberry is a rounded, single seed, and the rest of the grades decrease in size from AA to the smallest MH/ML. Coffee is sorted by size to give a more consistent outcome from the roasting process. Combining beans of different sizes would leave some over-roasted and some-underoasted. This could leave the coffee tasting bitter and harsh.
